"The winters in some parts of Italy can be extremely bitter but this thick Italian winter soup warms both the body and soul!"

Ingredients

  • beans - 14 oz (400 g) canned, white
  • water - 1 1/5 cups (300 ml.)
  • vegetable stock - 1 cube
  • tomatoes - 14 oz (400 g) mashed
  • tuna - 7 oz (200 g) canned in olive oil
  • onions - 2 heads
  • garlic - 2 cloves
  • olive oil - 4 tbsp
  • sugar - 1 tsp
  • paprika - or spicy cayenne pepper if desired
  • basil - fresh, optional
  • black pepper - ground

How to make

In a pot, fry the finely chopped onions and pressed garlic until the onion softens. Add the smashed tomatoes, water and crumbled vegetable stock cube. Add the drained and rinsed with water beans, the mashed tuna, finely chopped basil, cayenne pepper and 1 tsp sugar.

Bring to a boil and then reduce the heat to a minimum. Leave for 10 minutes, then remove the soup from the heat. Optionally, garnish with garlic croutons and torn basil leaves.
