Ingredients

  • mandarins - 10 - 12
  • sugar - 1 1/2 cups
  • lemon juice - squeezed juice of half a lemon

How to make

Put the mandarins whole in boiling water for about five minutes. Then remove and cut them into two halves and remove the seeds, if any.

Blend with a blender, add sugar and lemon juice and put them on a slow fire. Stir occasionally and boil until thickening.

I have just gone through 5 pages of mandarin marmalade recipes on Google and read many of the comments and I can't help wondering if any of these "cooks" ever try a good quality marmalade and compare it with their own pathetic creations. Also you will notice that most posts are on what they think it will taste like - less than 10% of people come back to post what it really turned out like. It seems that most of these "cooks" don't really know how to make good jam or marmalade. A lot of the recipes are plagiarized from others (which include bad advice). Oh, but they might introduce another ingredient to make it look authentic.
