How to make
Heat the water to boiling point and add the sugar. Reduce to low heat and boil the sugar syrup until it begins to thicken slightly.
The chokeberry are blanched in boiling water for 2 minutes, strained, pureed and dropped immediately into the hot sugar syrup.
They are heated until the mixture boils, the heat is reduced to a minimum and the jam is boiled for 7 minutes. Remove it from the heat and leave it for 8 hours.
Then boil again and cook for another 5 minutes on low heat. Citric acid is added and the jam is left to cool completely. It is distributed in dry clean jars and closed.
