How to make
Chokeberry is a very healthy and valuable fruit for our health. Slightly underestimated, it is a strong immunostimulant. Therefore, we use it in the winter months in the form of jam, syrup or dried.
We clean the fruit from stems and leaves. We put the grains in a colander and wash them under running water.
Place them in a glass or enameled container, cover them with sugar, add water and lemon juice.
We leave them in the fridge for 12 hours, during which time we carefully mix the ingredients. The next day, we strain the fruit in a colander, and put the strained sugar syrup on the stove.
Boil over moderately high heat until the sugar melts. Then reduce the temperature and after about 20 minutes add the fruits and the aromatic cloves, wrapped in a gauze bundle. Boil the jam for another 15 minutes and remove the saucepan from the heat.
The jam is left for another 12 hours in the fridge, so that the fruits can absorb the aromas and soak up the syrup.
Bring to the required thickness.
Add the citric acid dissolved in 2 tbsp. lukewarm water. Separate the cheesecloth with the cloves.
We prepare clean and dry jars. Pour the hot jam into them and turn the lid upside down to seal them from the residual heat. We cover them with a towel.
Jam is a suitable ingredient for sticking Cinnamon Cookies together, can be added to a Pastries, complementing it with a tangy tartness, or mixed with cream or yogurt for Breakfast.
