How to make
Select hard cheese, preferably unsalted. Soak it for 1 hour in cold water, keep the water ice cold. Strain and cut them into cubes about 1, 5 cm in size. The cheese is rolled in a little flour to absorb the excess fat.
Split the egg yolk and white and beat the white into snow with a pinch of salt. Beat the egg yolk, add the flour and starch, as well as beer, until you get the density of cake batter.
Stir this gently with the egg whites. Dip the cheese in the crumbing and drop it in to fry in plenty of oil in a preheated skillet or deep fryer.
