Peel the pumpkin, cut it into pieces and put it to boil until soft. Allow to cool, then add the ground walnuts and vanilla and stir to obtain a coarse puree.
In a greased tray, place 3-4 thin phyllo pastry sheets, a little oil, arrange a layer of filling and repeat until you run out of products.
Sprinkle the tray with oil and a little sugar and cut the pie into squares. Bake in a hot oven until browned.
