How to make
Mix the yeast with the sugar and stir until you obtain a sludge. Mix 1 tbsp flour with 4/5 cup (200 ml) and add it to the yeast.
Leave in a warm area for the yeast to effervesce. To the sifted flour, add 1 tsp salt. Form a well, pour in the yeast and start to knead.
Gradually add the melted butter and yoghurt. Knead a soft and stretchy dough, divide it into 10 balls. Crumble the feta cheese, add the eggs and stir. Roll out each ball into an elliptic shape. Press in the middle and pour in part of the filling.
Fold and close the ends of the each bun. Leave them to rise about 1 hour, then sprinkle lightly with water. First, bake at 430°F (220 °C), after 10 min. lower to 360°F (180 °C) and bake another 20 min.
