How to make
Split the egg yolks from the egg whites and add the four to the egg yolks, with 2 cups sugar and 2 cups of hot water and stir the mixture nicely.
Separately beat 5 tablespoons of flour, with 1 cup of cold water, then beat the egg whites with the 5 tablespoons of sugar to snow. The base is divided into two parts, the syrup is optional.
Add yolk mixture to the second mixture (with flour) and boil in a water bath to thickening. Then add the juice and rind of the lemon.
When the mixture cools well, add the snow and mix well. Spread the mix on the bottom layer, cover it with the second part and coat the top and sides with the remaining cream.
Put it in the refrigerator for 2-3 hours, before serving.
