How to make
Spike the partridge with bacon. Bake whole or cut into 4 pieces. In a tray in the oven, sauté the onion and remaining bacon.
When the onions turn pink, add the partridge. Sauté on all sides until golden brown. Put the black pepper and bay leaf in.
Pour in a little water and once a sauce forms, begin to baste the birds with it occasionally. When the meat softens, make a thickening agent from the yogurt and flour.
Pour it into the oven dish with the partridge and finish baking. Serve the dish warm.
