How to make
Beat the egg whites with the salt and once they harden a little, add the sugar gradually. Whisk until their peaks turn stiff. Separately, mix the coconut flakes with the flour and add this mixture in portions to the egg white mixture, stirring gently and carefully.
Pour from this mixture onto a tray covered with baking paper and form small biscuits. Put the coconut biscuits to bake in a preheated 360°F (180 °C) oven for 12-15 minutes or until they turn a nice, slightly pink color.
Leave the baked coconut biscuits to cool completely and then remove them from the paper. Melt the chocolate with the butter in a water bath. Dip the biscuits’ bottoms in the chocolate and leave those ends facing up, until the chocolate solidifies.
Once this happens, you can decorate the top using a pastry bag with the remaining chocolate. Hope you like them!
