Ingredients

  • phyllo pastry - 17.5 oz (500 g) sheets
  • olive oil - 2 - 3 tbsp + some for spreading
  • butter - 2 1/3 tbsp (35 g)
  • green onions - 3 - 4 bunches
  • oregano - 1/2 tsp
  • milk - 4 - 5 tbsp
  • eggs - 4
  • feta cheese - 14 oz (400 g)

How to make

In equal amounts olive oil and butter, braise the green onions that you've chopped into slices for 5-6 min. covered in a pan on low heat.

Season with a little oregano and leave to cool, while pouring in cold milk as well.

Once the onions are cooled, add the eggs and crumbled feta cheese.

Smear a round tray with olive oil. Take 2 phyllo pastry sheets and smear them with olive oil.

Put filling at one end and wrap the sheets up into a roll. Place the rolls in the tray, starting from the middle and going outward to form a spiral.

Continue in this manner until you run out of sheets and filling.

Bake in a preheated 360°F (180 °C) oven about 40-45 min. until reddened.
