Unarguably, tiramisu ranks among the most popular, most loved and most commonly prepared desserts. There are so many diverse recipes for it that the term "tiramisu" is used to label desserts that actually look nothing like the classical recipe.

Tiramisu is prepared with biscotti, a strong espresso, mascarpone and the dessert wine Marsala. These are considered the golden ingredients for classic tiramisu. Here's how to prepare the favorite Italian treat with a unique aroma and full flavor.

Classic Tiramisu

Ingredients:

For the cream: 4 egg yolks, 1/2 cup sugar, 1 cup Marsala wine (or almond aperitif), 1 2/3 cups mascarpone, 1 cup liquid cream.

For the biscotti: 24 biscotti, 4 tbsp cocoa, 1 cup espresso, 1 cup Marsala wine (or almond aperitif), 1 tbsp sugar.

Preparation: The 1st step is getting all the ingredients ready. Take all of them out of the fridge ahead of time since they do need to be at room temperature.

Boil the espresso. Add 2 tbsp sugar and 1 cup Marsala or almond aperitif to it. Stir and leave them aside.

Classic Tiramisu

The next step is the cream. Beat the egg yolks and the sugar with a mixer until the mixture thickens and whitens. Pour it into a bowl and add 1 cup Marsala wine to it. Place the bowl in a pot with water and stir in a water bath, about 10-12 min., until the mixture thickens a bit. Transfer the bowl into a different pot with cold water and stir until the mixture cools completely.

To the now cooled mixture, while stirring with a wooden spoon nonstop, add the lightly beaten mascarpone cheese and the cream that's been beaten to a stiff snowy consistency. Stir until you get a thick cream.

Next comes the arrangement of the tiramisu. To do this you will need a rectangular oven dish. Dip each of the biscotti in the coffee mixture for several seconds and arrange them along the bottom of the oven dish. Dip them for only 2-3 seconds, otherwise the biscotti will fall apart.

Once the entire bottom of the dish is covered, spread 1/2 the cream on top. Arrange a second row of soaked biscotti on top of it. Distribute the remainder of the cream on them. Put the dish in the fridge for 3-4 hours. Serve the tiramisu generously sprinkled with cocoa.
