But before you begin preparation, you need to get shrimp. If using fresh shrimp, you'll need to clean them and boil them briefly. Supermarkets sell cleaned and cooked shrimp in plastic packaging. They will also get the job done perfectly. There is one main recipe for preparation but there are 3 options for the end - all of them with an indescribable and unique taste.

Saganaki Shrimp with Tomato Sauce and Feta

Ingredients: 17.5 oz shrimp, 1/2 cup olive oil, 1 can of diced tomatoes (or 1-2 large tomatoes chopped finely), 1 cup ouzo, white wine or cognac, 7 oz feta cheese, 1 onion head, 2 garlic cloves, 1 green pepper, oregano, thyme, salt and black pepper.

Preparation: Heat some of the olive oil in a pan. Add 2 garlic cloves, finely chopped. Then add the shrimp as well. Leave them for a few minutes on the stove until they release their juice. Sprinkle with a little salt and pepper. After 2-3 min., pour ouzo over the shrimp and leave them to simmer on low heat for a few min.

In the meantime, lightly braise the cut into slices onion in another pot. Also add the finely chopped tomatoes and the pepper that's been cut into round slices. Sprinkle with oregano or thyme on top and leave it for several min. to boil. Finally, add the tomato sauce and shrimp. Leave the mixture to simmer on low heat, adding the crumbled feta cheese on top also.

Another option is to distribute the mixture into clay pots. Sprinkle with the feta on top and bake in the oven.

The 3rd option is to transfer the mixture to a tray or glass cook pot. Sprinkle with crumbled feta on top and bake in a 360°F (180 °C) oven for about 10-15 min. It's ready once the feta melts. Each of these options allows for garnishing with slices of tomatoes on top.
