"Sophisticated, aromatic and very tasty - created to impress"

Ingredients

  • shrimp - about 9 oz (250 g) or 6 large pcs.
  • olive oil - 3 tbsp.
  • onion - 1 onion
  • fennel - 1/2 head
  • sugar - 1 tsp. up to 2 tsp.
  • ouzo - 2 tbsp (30 ml)
  • canned tomatoes - 10.5 oz (300 g)
  • salt - 1 tsp.
  • feta cheese - 1.8 oz (50 g)
  • dried oregano - 2 - 3 pinches

How to make

The shrimp are defrosted - blanched.

In a pot/thick-bottomed pan pour olive oil to heat up and add the chopped onion and fennel - to soften and aquire an appetizing color. Take them out and set them aside.

Put the shrimp in the pan, sprinkle them with sugar and leave them to change color and the sugar to caramelize slightly. They are poured with Ouzo and they are flambeed.

Take them out and place them in a warm place. Return the tomatoes, fennel and onions back into the pan, add salt and oregano and leave them to simmer over medium heat for about 10 minutes - to thicken.

Add the shrimp and white cheese and mix gently. Leave them on the hob for another minute.

Serve them immediately with the tails up. You can also sprinkle a little parsley.
