When we're talking about making doughy delights with potato flour, we're not actually talking about real potato flour that's generally familiar to people who follow gluten-free diets, nor potato starch, which is entirely different from potato flour. Let's learn a little bit more about the idea.

Potato flour is a ready-made product made from dried potatoes. It's important to know how to prepare baked goods such as pizza, bread or even cakes from potato dough that we've made ourselves. Here are some interesting ideas:

1. Potato Bread Buns

Ingredients: 17.5 oz potatoes, 1/2 cup sugar, 2/3 cup butter, 2 tsp salt, 2 eggs, 2 packets dry yeast, 1 tbsp oil, 3 4/5 cups flour, 1 2/5 cups warm water.

Preparation: Place the washed potatoes in boiling water for about 30 min., then peel them and mash them with a potato masher. To them add the sugar, melted butter, salt and eggs and mix everything until homogeneous. Dissolve the yeast in half the water, pour it in to the potatoes, add the flour and remaining water until a soft dough forms.

Leave the dough in a greased bowl for 1 hour to rest, then form bread buns from it (you may need several trays), leave them for 30 min. in a warm area to rise once again. Bake in a preheated 370°F (190 °C) oven and once ready serve with jam.

2. German Potato Cake

Ingredients: 1 boiled potato, 2 eggs, 1/2 the rind of a lemon (grated), 3 1/3 tbsp corn semolina, 3 1/3 tbsp finely ground almonds, 2/5 cup sugar, 2 tsp baking powder, 2 tbsp water, 1 pinch of salt, powdered sugar for sprinkling.

Preparation: Combine the eggs, water, lemon zest and sugar in a bowl and beat with a mixer for 3 min. To them add the grated potato and almonds. Mix the corn semolina with the salt and baking powder, stir and add them to the potato mixture.

Keep mixing until you get a dough, then place it in a preheated 340°F (170 °C) oven and bake until pink. Wait a little for it to cool, sprinkle with powdered sugar and serve.
