Everyone knows how to make crumbed food. There are many variations of this. For example, when crumbing cheese, it needs to spend some time in ice water or a freezer. Then make it in the usual way: egg-flour-egg or the so-called "fillet fritters."
This batter is, in its simplest version, beaten eggs, mixed with flour, added milk, a little mustard, a clove of garlic, black pepper, salt and brought to a thick density, like a thick pancake mix. A variant with beer instead of fresh milk exists, and one in which the egg whites are broken down to a thick foam separately and then mixed gently with the entire blend. The basic principle is that the egg goes in last.
Crumbing usually goes hand in hand with frying. This is because it is easier and faster. But you have to bear in mind the proven down side to the frying process. In recent years, many people have begun to avoid it, since almost all foods that we fry can achieve an even better and healthier appearance when cooked in the oven.
Why is it necessary to sit for hours in front of the stove to fry goodies when you can just slide them in the oven? Here are some ideas for fried foods in the oven:
Crumbed zucchini in the oven
Ingredients:
3 zucchini, 1 cup yoghurt, 1 tsp mustard, garlic granules, salt
For the crumbing:
1/2 cup breadcrumbs, 1/2 cup potato flakes, 1 tablespoon grated parmesan cheese, 1 teaspoon garlic powder, 1 tsp dried dill, 1 teaspoon paprika
Method of preparation:
The zucchini are cut into 8 pieces, lengthwise. Immerse them in the pre-mixed yoghurt, mustard, garlic granules and salt to taste. Then dip them in the crumbing mixture. Roll them thoroughly and line them up side by side in a buttered pan. On top, spray with olive oil and bake at 360°F (180 °C), about 30-40 minutes.
They can be served with garlic yoghurt.
Crumbed chicken livers in the oven
Ingredients:
17.5 oz chicken livers, 2 eggs, flour for crumbing, breadcrumbs
Method of preparation:
Wash the chicken livers, drain and salt moderately. Roll them in the flour, egg and breadcrumbs, respectively. Arrange on a baking sheet and roast in a preheated oven for about 15 minutes.
Baked crumbed pangasius
Ingredients:
2 lb pangasius fish, salt, soya sauce, lemon sauce
For the marinade:
½ cup flour, ½ cup breadcrumbs, ground black pepper, dried lovage, thyme
Method of preparation:
Marinate the fish with the salt, soya sauce and lemon sauce; it is best to leave it in the mixture for half an hour. Then the fillets are dipped in the prepared marinade. Arrange them next to each other in an oven dish with baking paper, pre-oiled. Place the fish on top, sprinkle with oil or olive oil. Bake in preheated oven at 390°F (200 °C).
Note - can be baked in a baking bag.
Crumbed steaks in the oven
Ingredients:
17.5 oz pork chops (4-5 pieces), 3 eggs, 2 oz grated cheese, 2 tablespoons flour + flour for rolling the steaks, 3 tablespoons breadcrumbs, 1/2 bunch dill, 1/2 bunch parsley, black pepper, salt, oil
Method of preparation:
Tenderize the steaks well. Add salt, sprinkle with pepper and roll in the flour.
Crumbing is prepared from the grated cheese mixed with 2 tablespoons of flour, the breadcrumbs, dill and parsley and then adding them to the beaten eggs. Stir well and if needed, add water or milk. Salt and pepper are added to taste.
Roll the steaks in the blend and arrange them in a tray covered with baking paper. Top with oil or olive oil. Cover the tray with aluminum foil. Bake for about 50 minutes in a preheated oven at 430°F (220 °C). Thereafter remove the foil and bake until finished.
