Who doesn't love potatoes? Fried, boiled, baked - this is a vegetable that can be prepared in many different ways. But sometimes we avoid them because, in order to prepare them, we have to work hard first. What do we mean? The fact that in order to eat potatoes, we have to peel them. But why do we do it and is it necessary? Do potato peels have any health benefits?
The answer to this question is a firm "yes". Although we have been taught and convinced the opposite all our lives, potato peels, especially fresh potatoes, are very beneficial for our health.
The reason is that all the useful fiber, minerals and substances are contained precisely in the peels. Potassium, phosphorus, iron and vitamin C - all these vitamins we need are in the potato peel. And when we remove the peel before cooking it, we actually throw away all these useful substances.
To avoid this mistake, simply don't peel the potatoes. If you want to cook boiled potatoes, be sure to boil them with the skins on, and don't remove the skins before boiling. This way you will preserve all the beneficial properties of the potatoes. Therefore, it is best to boil them washed and unpeeled. This way, the vitamin C contained in them is preserved, but at the expense of potassium, which is lost during such processing. When steamed, the opposite happens - potassium is preserved, but vitamin C is minimized.

And if you have new potatoes, eat them with the skin. They are very delicate and thin, so you won't feel it after heat treatment. And spring new potatoes, in addition, contain a significantly higher amount of vitamin C.
However, it should be known that over time, the levels of vitamins in potatoes decrease. When stored for a long time, at a temperature above 10°C, the vitamins in potatoes decrease. In other words, there are more of them in new potatoes than in regular potatoes.
Yes, we know that dishes with new potatoes are not so many and varied, but on the other hand they are for lazy cooks. You don't have to peel them when cooking, which definitely saves a lot of time. On the contrary - potato peels are healthy.
The peels of one medium-sized potato provide half of the recommended daily doses of soluble fiber, potassium, iron, phosphorus, zinc and vitamin C.
