Elderberry syrup

Elderberry syrup is very easy to prepare and in summer it is a very pleasant and fragrant way to deal with the heat.

One way to make elderberry syrup is to make it from flowers and by using citric acid for acidification.

You need 45 elderflowers. It has a very delicate smell and it is a pleasure to pick. It is good to use the elderflowers as soon as you have picked them, so that they do not wither.

The flowers are poured with a liter and a half of water and the container in which they are, is cover with a lid. They are left that way for 20-22 hours.

The juice is then strained and 2 kilograms and 200 grams of sugar are added and it is stirring, until the sugar has completely dissolved.

Add the citric acid and stir, so that the liquid can dissolve. The resulting syrup is poured into bottles, by filling them to the brim.

If you want the elderberry syrup to be slightly carbonated, add a few grains of rice. When you want to drink the syrup, just dilute it with water, or with carbonated water depending on your preferences.

You can also dilute it with champagne if it is a special case.

Elderberry

Elderberry syrup can be prepared in other ways. You need 65 flowers and 6 lemons. The lemons are cut without peeling and are placed in a large container in which the elder flowers are already placed.

Two and a half liters of water are boiled and then removed from the stove. Add 2 and a half kilograms of sugar and 2 tablespoons of citric acid. Stir, until the sugar has completely dissolved.

The hot liquid is then poured over the flowers and lemons. Cover it with a lid and leave it, until it cools completely. Then leave it in the refrigerator overnight.

Strain the elderberry syrup through gauze and pour it into bottles. You can surprise your guests by adding a few raspberries or slices strawberries to the elderberry syrup diluted with water or sparkling water.

If warm water is added to the elderberry syrup, it can successfully replace tea during the cold winter months.
