Making cakes with a fondant icing decoration is considered a highly advanced culinary skill and not without good reason. Fondant icing can be bought ready-made but the quantities are usually industrial and too unsuitable for home use.

If you already have experience in making cakes and now wish to advance your abilities by decorating and covering them with fondant icing, then it's best to learn to make it yourself right at home.

To make fondant icing at home you need gelatin, water, glucose, glycerine and powdered sugar. 1 serving of fondant icing is made from 1 packet gelatin, 1/5 cup (60 ml) water, 1/2 cup (120 ml) glucose, 1 tsp glycerine and 2 lb powdered sugar.

Dissolve the gelatin in the cold water until it swells, then heat it in a water bath until it liquefies. Heat the glucose a little and mix it with the glycerine. To them, add the gelatin and stir well.

Pour half the powdered sugar in a suitable container and add the gelatin-glucose mixture. Stir well until you get a thick mixture. Gradually, add the remaining powdered sugar, the goal being to obtain a sticky dough that you knead as you would a pita.

Wrap the resulting sugar dough in stretch wrap and leave it at room temperature for 1 day. The next day, unwrap it and knead with some more powdered sugar if necessary. At that point, it's ready to work with. All you have to do is roll up your sleeves and create yet another culinary masterpiece.
