Eclairs are one of the most iconic French desserts, which are so light, fluffy and delicate that few people can resist their taste. After preparing the steamed dough for the eclairs, the other most important moment of their preparation is baking. Properly baked eclairs are a real delight for the palate.
Once you have already piped the steamed dough onto the baking paper, you can spread the eclairs with a beaten egg with 1 tablespoon of water to make them shinier.
A mandatory condition for well-baked eclairs is to put them in a preheated oven – at 200°C and once in the oven, do not open the door. Otherwise, they will flatten. The eclairs are baked for about 30 minutes, after which they are ready and can be filled with a cream of your choice.
Of course, it all depends on your oven and its features, but this is the standard temperature. The larger the eclairs, the longer they will take to bake. If your oven has a fan, the baking time can be reduced by a few minutes – about 3-4. The baked eclairs should have a nice golden brown color.
