Lamb's head has gained popularity all over the world, but it is not to everyone's taste. Many people would be happy to throw it away.
For others, roasted lamb's head is a delicacy!
With its delicate texture, lamb's head melts in your mouth when well cooked. That's why you have to be careful, especially when you prepare it.
If cooking the lamb head separately, be sure to wash it well and soak it in water to extract the blood. It is ideal to then put it in a suitable plastic bag and rub it with spices such as salt, black pepper, allspice, a pinch of oregano, spearmint, and also add a bay leaf or two.
Other spices to your taste and even greens such as carrot, onion, garlic and parsley would also be suitable.
Finally, tie the bag and then boil it in a pot of water.
The lamb head is boiled on medium heat for about two hours.
When it is ready, separate the meat, lamb tongue (skin removed), remove the brain and add a little butter. Then enjoy the amazing lamb dish you made!
