Buying and cooking pork chops or loins can be a challenge. Additionally, there are many cuts of pork on the market, many of which are sold under different names. Pork labels can also be confusing.
The loin is the area between the pig's shoulders and hind legs. It is the most tender part of the animal.
Rib and sirloin chops are cut from this area, as well as pork tenderloin. Pigs are bred to have long loins and have up to 17 ribs, unlike beef and lamb which have 13 ribs.
Bone-in pork chops or pork chops are cut from the meat perpendicular to the backbone, often from the loin (thick or thin, it is up to you).
These cuts will be dry if overcooked. But when cooked properly, even these delicious steaks can be juicy and tender.
