Here we will talk in particular about the pumpkin, which we know how to utilize its seed and from the fleshy part we prepare delicious savory dishes, soups with pumpkin, purees and pastries. We are less familiar with pumpkin skin, but it is extremely healthy with its high content of vitamin C, fiber, potassium, leptids and proteins.
Pumpkin skin is very healthy, because it has an extremely beneficial effect on the general improvement of the entire organism and especially for the prevention of heart disease and cancer. Also pumpkin skin is used for skin problems, intestines, constipation, fluid retention in the body and has an antifungal effects.
Pumpkin skin can be consumed in many ways - to enrich salads, rice, when cooking broths for various dishes, for delicious healthy side dishes, purees, cream soups. In any case, it must be well cooked, because it is very hard.
Here is an idea for a delicious salad with pumpkin skin: 2 cups pumpkin skin (boiled and grated), 1 cup chopped fresh tomato, 1/2 cup chopped onion, 3 tbsp. olive oil, 2 pinches of salt.
All products are mixed and the salad is chilled well before serving.
To prepare cream soups, you just have to boil the pumpkin skin well and along with the other products you have chosen for it, puree, until it becomes smooth.
