If you want to freeze whole apricots, along with their pits, you should choose apricots, which are well-ripened but not crushed. They should not have worms in them or bruises from hail. Here's how to prepare them for freezing:
- The apricots should be washed very well in cold water, then placed on a pre-laid towel and dried very well. The apricots are then placed on a tray lined with baking paper and placed in the freezer, until they harden;
- Then they are distributed in plastic bags, which must be tied very well, so that they do not absorb other odors from the freezer;

Freezing pitted apricots

Freezing apricots with sugar
Apricots that are slightly crushed but not spoiled or rotten are suitable for this type of freezing and here's how:
- Apricots should be washed, then pitted and then grinded either in a food mincer or a blender. After that, sugar added according to taste, they are mixed well and distributed in plastic boxes, by not filling them to the top, but leaving room, because when they freeze, they will increase in volume. The boxes must be tightly closed before placing them in the freezer;
Freezing apricots in the form of syrup
- Apricots are washed, cut and pitted;
- Put them in a pot with water and sugar, the ratio being two cups of water with 1 cup of sugar and after they have boiled, leave them to cool;
- The apricots are put into boxes, by pouring some of the syrup in which they were boiling, by leaving room, because, as we said, the volume will increase after they are frozen;
- Then the boxes are closed tightly and put in the freezer.
