To make spelt bread sourdough, we need 1.2 oz (35 g) of whole wheat spelt flour, which is grinded and 3 1/3 tbsp (50 ml) of spring water. Mix these two ingredients in a glass container, stir with a wooden spoon and leave the mixture at room temperature for 1 day.
The mixture should look like a thick mixture. The next day, add another 1.2 oz (35 g) of flour and 3 1/3 tbsp (50 ml) of water and mix well again.
On the third day, you must discard half of the mixture and add another 1.2 oz (35 g) of flour and 3 1/3 tbsp (50 ml) of water. On day four, check if the sourdough is ready and if it is not, you have to discard half of the mixture again and add another 1.2 oz (35 g) of flour and 3 1/3 tbsp (50 ml) of water.
Repeat this step, until a sourdough is obtained.
You can tell if it's done by the holes and bubbles, that have formed, as well as by the smell of sour boza.
This can take six, seven days and if it is very warm, the sourdough can be made in 2 days.
It is important, not to stir the mixture, as it stands between days.
With the sourdough, you can knead a delicious spelt bread and various types of healthy bread.
