Fresh fruit are cleaned from their seeds, cut into pieces and covered with melted caramel. Then they are carefully turned, so that the caramel covers them on all sides and leave them for 10-15 minutes to cool.
Compote fruit, as well as fresh bananas, are not suitable for such caramelization. Therefore, they are placed directly in the melted caramel and very carefully stirred 1-2 times, then leave them for 3-4 minutes on the hob, so that the caramel simmers and then they are remove and left to drain.
