How to make
Boil the potatoes, drain them and grate into a bowl. Add the grated zucchini, 2 fresh eggs, breadcrumbs, oregano, parsley and season to taste with salt and black pepper.
Stir well, the mixture needs to be thick.
Heat oil in a pan, scoop from the mixture with a spoon and push into the pan with a fork, flatten slightly on top. They don't need to be perfect, leave them messy, drop them in haphazardly to fry on both sides until golden.
Take them out onto a napkin to absorb the oil, transfer to a plate.
In a bowl, mix the products for the sauce and stir well.
Serve the tasty meatballs warm, dipped in the garlic sauce.
