How to make
Sift the flour, make a well in the middle of it, add the yeast dissolved in the milk, the eggs, sugar, salt, oil, vanilla and grated lemon rind.
Knead a soft dough, cover with a towel, leave it to rise for 20 min.
Knead the dough again, divide it into 4 equal parts. Roll out each one into a round sheet, cut each sheet into 8 triangles. Put 1 tsp of jam onto each and roll them up into scones.
Arrange in a tray with baking paper. Leave them for 10 min. Smear with the beaten yolk, sprinkle sugar. Bake the scones at 360°F (180 °C) for 25-30 min.
