  • pork legs - 3.5 lb (1.5 kg)
  • red wine - 3 1/3 tbsp (50 ml)
  • garlic - 1 clove
  • salt
  • black pepper
  • paprika - 1 tsp
  • cumin - 1 tsp
  • thyme - 2 pinches
  • rosemary - 1 pinch
  • allspice - 1 tsp
  • olive oil - 3 tablespoons
  • broth - 1 cup

How to make

Clean and mash the garlic in a mortar and pestle with a little salt. Pour in the olive oil, stir, add the spices. Pour in the wine and stir everything.

Take the pork leg, put it in a tray, smear well with the resulting mixture, rub it in well with your hands and cover with foil. Put in the fridge to marinate for at least 6 hours.

Prior to baking, take the meat out of the fridge and leave it at room temperature for 30 min. Heat the oven to 360°F (180 °C), pour 1 cup of broth into the tray with the meat, cover with aluminum foil and put to bake.

Cook 30 min., then lower to 320°F (160 °C) and bake 1 hour. Remove the foil and bake a final 30 min. at 360°F (180 °C) until the meat gains a nice brown color.

Take the meat out and cover with foil to smother for 15 min., then cut into servings.
