"I take my Sauteed Pork with Onions very seriously, so much so that I`m already ordering seconds."

Ingredients

  • pork - 21 oz (600 g) neck or clod
  • onions - 5 heads
  • thyme - 2 bunches
  • black pepper
  • salt
  • white wine - 4/5 cup (200 ml)
  • butter - 1 tablespoon
  • oil - 1 tablespoon
  • salvia - a few leaves

How to make

Cut the meat into coarse pieces. Put the butter in a pan and heat it on the stove. Put 2 bunches thyme and several salvia leaves to braise for a few sec. This way the spices will release their aroma.

Take the spices out, pour the butter into a pot and add a little oil to it, leave to heat up, put the pieces of meat to braise on high heat.

Chop the onions into crescents and add them to the meat, stir and fry until the meat and onions turn golden in color. Pour the wine, salt, black pepper and fried spices in a bowl, stir and pour this in to the semi-braised meat. Stir everything and cover with a lid.

Lower the stove to medium temperature and saute the meat about 30 min. until the liquid evaporates, while stirring periodically. Serve with cayenne pepper if desired and cold wine.
