How to make
These are the traditional Chilean sopaipillas pumpkin pancakes. Strain the boiled pumpkin into a puree.
Add sifted flour and pumpkin oil. Gradually knead the resulting hard dough until smooth. Cover it in cling film and place in the refrigerator for 15 minutes.
On a floured kitchen counter, the dough is rolled into a sheet with a thickness of about 1 cm, cut it into circles with a glass. Each circle is gently pricked with a fork.
These Chilean pumpkin pancakes are fried until golden brown in hot oil.
Serve warm pumpkin pancakes with honey or other garnish as desired.
