How to make
Boil the semolina into a thick paste and cool it. Pass the cottage cheese through a sieve. Pour the cottage cheese and semolina in a suitable glazed container and stir well.
Add the egg yolk, sugar, butter, and stir again. Add the whipped egg white and gently stir again.
In a steamer basket, put foil, grease it with oil and spread the soufflé mixture on it. Steam-cook until you obtain the required density.
