How to make
Boil the tortellini according to the package directions and drain them. Heat 3 1/3 tbsp (50 ml) of oil and fry the chopped onions. After a minute add the finely chopped garlic and sliced mushrooms.
Once the vegetables soften, mix them with the tortellini straight into a well oiled oven dish. Beat the 2 creams and milk, tomato paste and salt together.
Pour this into the oven dish and gently stir/shake to spread the mixture out evenly. Put the tortellini with cream and mushrooms to bake until the pasta absorbs most of the liquid.
Remove from the oven, sprinkle with a little grated parmesan cheese and breadcrumbs, then return the dish to the oven to obtain an appetizing crust.
Serve with chopped fresh parsley.
