How to make
Put the water for the tortellini in a pot on the stove with a pinch of salt and let it boil. Once it comes to a boil, add the tortellini and boil 10 min. until ready. The ratio of water to pasta needs to be 4 1/5 cups (1 L) water for every 3.5 oz (100 g) pasta. Clean the garlic and cut it finely.
Put the olive oil and butter in a pan and heat them on the stove, add the garlic and braise for a few seconds, pour in the cream and milk, stir and leave the sauce to come to a boil. Once it does, cook for a few min. until the liquid evaporates.
Strain the tortellini, put the processed cheese in the sauce, along with the black pepper and nutmeg to taste, stir until the processed cheese melts and pour in the tortellini.
Stir, cook a few min. and sprinkle with parmesan. Remove from the stove and serve, while sprinkling with grated mozzarella if desired.
