Ingredients

  • rabbit - 1 whole
  • onions - 2 lb (1 kg)
  • garlic - 2 heads
  • tomatoes - 14 oz (400 g) diced, canned
  • white wine - 1 cup
  • flour - 2 - 3 tbsp
  • bay leaf
  • allspice
  • black pepper - grains
  • paprika
  • oil
  • salt
  • parsley

How to make

Wash the rabbit well and cut it into portioned pieces. Pour water over it and bring to a boil, while periodically removing the foam. Wash it with cool water again and put it in a clay pot with a little of it.

Add a little oil, the flour diluted with the wine, salt to taste. Pour in some of the broth (strained) in which you boiled the rabbit.

Season with paprika, bay leaf, allspice and grains of black pepper. Cover and bake in a 360°F (180 °C) oven for about 90 min. until the meat softens. Once it does, add the coarsely chopped onions and cleaned and coarsely chopped garlic.

Return to the oven and bake about 45 min. Then add the tomatoes and return to the oven briefly. Optionally, add in a chili pepper.

Before serving, sprinkle with finely chopped fresh parsley. If you like, you can substitute the onions with 2 lb (1 kg) scallions. Enjoy!
