How to make
Clean and wash the potatoes and onions. Cut them into coarse crescents. Put them in a tray, pour the olive oil over them, sprinkle with thyme, salt, black pepper and paprika, chopped rosemary and stir. Pour in the broth.
Smear the pork belly with a mixture of soy sauce, the spices, olive oil, brandy and chopped garlic. Rub the mixture well over the meat and put it in the tray with the potatoes.
Cover the tray with aluminum foil and bake in a preheated 360°F (180°C) oven for 1 hour.
Take the tray out, remove the foil and return to the oven for the meat and potatoes to gain a nice crisp, about 15 min. Serve the pork belly chopped.
