Soak the meat in water with a little vinegar, leave it for 1-2 hours, then drain it. Chop the onions coarsely and braise them with the meat.
Sprinkle with paprika and pour on water. After simmering for a bit, add the tomatoes and garlic, either as separate cloves or whole heads.
Pour in the wine and all the spices. Once the water boils off, your kapama is ready to serve.
