How to make
Peel the potatoes and boil them. Put them in a bowl and while still warm, mash them finely using a fork.
Add the finely chopped onions and parsley. Season and stir.
Transfer the salad to a form with removable sides, the bottom of which you've sprinkled with finely chopped parsley beforehand.
Cover with stretch wrap and press lightly.
Leave it to sit for 2 hours, release from the form and invert onto a platter!
