How to make

Soak the washed gherkins for 2-3 hours in water. Carefully cut off their ends and prepare your jars. Place a fig leaf at the bottom of each.

Pack the gherkins in the jars as tightly as possible. Put 1 tbsp salt + water up to the neck of each jar. Place another fig leaf on top and close the jars tightly.

Leave the jars to sit for 2-3 days in a lit area - the brine needs to become murky. At that point, relocate the jars to a cool area. They should clear up in about 10 days and be ready for consumption.
