Ingredients

  • rabbit - about 14 oz (400 g) of meat
  • carrots - 1
  • onions - 1 head
  • peppers - 1, green
  • rice - 3/8 cup
  • parsley - 2 tbsp, chopped
  • salt
  • black pepper - ground, to taste
  • paprika - 1 tsp
  • oil - 3 1/3 tbsp (50 ml)
  • eggs - 1
  • yoghurt - 2 tbsp
  • vinegar - 2 tbsp

How to make

Cut the rabbit meat into small pieces, pour about 8 1/3 cups (2 L) cold water over them and put to boil on moderate heat.

Remove the foam after it comes to a boil and add the chopped onions, carrot, pepper and the oil. Once the meat is fully cooked, add the washed rice and salt to taste.

Let it simmer until the rice is cooked, add the black pepper, paprika and finally the parsley.

Take the soup off the stove, wait 2-3 min. and thicken it with the beaten together yoghurt, vinegar and 1 egg.
