How to make
Peel the pumpkin carefully, cut it into pieces and smother in a closed pot with 2 tbsp oil and a little sugar until softened. Once the water evaporates, remove from the stove and leave to cool a bit.
Lay out the phyllo pastry sheets on the counter. Sprinkle each with a little oil, distribute some pumpkin, sprinkle sugar, cinnamon and crumbled walnuts, then carefully roll them up and place in a pre-greased tray.
Repeat until you've run out of products, smear generously with oil and bake in a preheated 360°F (180 °C) oven until reddened or about 45 min. After taking it out, cover with a towel to smother. Serve cooled.
