How to make
This recipe is for 1 batch. If you'd like to make a greater quantity, increase the ingredients accordingly.
Peel the figs. Make a sugar syrup by putting the water and sugar to boil in a suitable container. Boil until the sugar melts and the syrup begins to thicken.
Add the figs and boil on low heat to prevent burning. Stir occasionally, while being careful not to tear the figs. Toward the end of baking, add the citric acid as well.
Remove the boiled jam from the heat and let cool. Distribute into dry jars, close tightly with suitable caps and boil for about 5 min. Store in a dark, cool area.
