How to make
This recipe is quite simple and effective. Clean the apples of any rotten parts, if any. Wash them and cut them into quarters, without removing the cores.
Fill 12 1/2 cups (3 L) jars with apples up to 2 finger widths below the rim of the jar. Pour in 1 cup of sugar per jar and fill up to the top with cool, non-chlorinated water.
You can make several jars following this method. Then pour them in a suitable barrel, put some mother of vinegar in (a special bacteria that multiplies in alcohol). If you don't have any, use some from someone who has already made this kind of vinegar before or just omit it altogether.
Close tightly with a lid and leave in a cool area for 20 days, while stirring with a wooden spoon occasionally.
Strain the ready vinegar and distribute and close in suitable bottles. Some residue will form on the bottom but don't let this worry you.
