How to make
Dissolve the yeast with the sugar in the warm water and leave it to bubble.
In a bowl, combine the flour, salt, pour in the effervescent yeast, the oil and knead a soft dough until smooth. If needed, add a little more flour.
Leave the dough in a buttered bowl to double in volume. Divide it into 7-8 balls, form them into wicks, coil them in a spiral to make pitas and dip briefly in 2 1/2 cups (600 ml) water, in which you've dissolved the baking soda.
Bake at 360°F (180 °C) until ready.
