How to make
Wash the pork shank and dry it well.
To prepare the marinade, chop the garlic finely and mix it with the soy sauce, basil, black pepper, rosemary, olive oil, mayonnaise and ketchup.
Smear the shank with this marinade and leave it for 4 hours in the fridge.
Salt it and put it in an oiled oven dish, cover with foil and bake 2 hours at 390°F (200 °C).
Remove the foil and bake another 20 min. for it to form a crispy crust.
