How to make
Put the cleaned calamari in boiling water. After 5 min., take them out and peel their skin.
Cut them with kitchen scissors into round slices about 1/2″ (1 cm) thick. Boil them in salted water about 30 min. until the mean softens completely. Put them in a colander to drain well from the water.
Dip each calamari piece subsequently in the flour mixed with the black pepper and thyme, then in the beaten and salted eggs, breadcrumbs and finally in the eggs again. Fry in heated oil until golden.
