How to make
It's good to wash the meat before you start cooking. Arrange the washed and dried pork shanks in an oven dish. Sprinkle with salt. Add the coarsely chopped vegetables to them. Add the black pepper grains and bay leaves.
Pour the white wine over the pork shanks. Pour in water, enough to cover the shanks. Cover the container and put it in a preheated 340°F (170 °C) oven for 180 min.
Heat the oil and braise the flour in it until golden. Add the tomato paste and while stirring nonstop, dilute it with the broth from the shanks.
Serve the shanks generously soaked in sauce and with a garnish of French fries.
