How to make
Knead a dough the night before you plan on cooking. Add cool water to the beaten egg, then the yoghurt, melted and cooled lard, yeast, salt and sugar.
Stir until you get a homogeneous mixture and add as much flour as it absorbs for a stretchy dough. Sprinkle the dough with flour and put it in a large plastic bag. Tie it closed and leave in the fridge overnight. The dough will have risen the next morning.
Knead lightly, smear with oil and leave it for 15 min. at room temperature. Make balls from the ready dough, roll out each one into a circle, put some crumbled feta cheese on and roll it up. Arrange them in a tray with baking paper.
Smear the mini buns with beaten egg on top. Put them in a 360°F (180 °C) oven and bake until golden.
