How to make
Soak the slice of bread, then drain it from the water. Add it to the mince. Add the finely chopped onion and spearmint, break an egg into it and knead the mince.
Roll it out onto plastic wrap. For the stuffing, place the eggs (whole), peas, and carrot on top. Form it into a ball, covering the stuffing.
Smear a glass cook pot with oil and sprinkle with breadcrumbs. Place the meat ball carefully on top, using the foil to help you, and then sprinkle generously with the cornflakes.
Bake in a moderate oven until ready.
