Ingredients

  • eggs - 4
  • sugar - 1 cup
  • milk - 1 cup
  • butter - 2/5 cup (100 g), melted
  • flour - 2 1/2 cups
  • baking powder - 1
  • cocoa - 2 tbsp
  • rum - 1 tsp
  • for the caramel
  • sugar - 1 cup
  • pears - 3
  • cream - 2/5 cup (100 ml)

How to make

Pour the sugar and 1 tbsp cold water in a pot. Let it caramelize. Peel, clean and dice the pears. Once the sugar obtains a caramel color, pour in the pears and stir.

After 5-6 min., take them out onto a plate and pour the heated cream into the remaining caramel. Stir until you get a homogeneous mixture and remove from the stove.

Beat the eggs. To them add the milk, melted butter and finally the flour with baking powder.

Stir well and set aside 1/3 of the mixture. To it add the cocoa and stir well. Pour 1/2 of the white mixture into a buttered and floured form. On top, pour in the brown mixture and distribute the caramelized pears.

Cover with the remaining white mixture. Bake at 360°F (180 °C) for about 35 min. or until when you stick a toothpick in the middle it comes out dry. Leave it to cool, invert onto a plate and pour the caramel sauce over it.
